We decided to do beer butt chicken on the grill with the whole chicken that we got from Fresh Fork.
It turned out great. It was crispy outside and tender and juicy inside.
We made a kale salad from a recipe featured on Why CLE’s blog. It had lemon juice, olive oil, garlic, feta and toasted walnuts. Very fresh and delicious.
We even managed to make chicken salad using the leftover chicken and some of the Fresh Fork yogurt. With apples, red peppers, dried cranberries, yogurt and lemon juice, this was a nice healthy alternative to a mayo soaked version.
We feel like we are getting a little better each week at making the most out of what we get from Fresh Fork.
